This beef sukiyaki udon is a rich and comforting Japanese noodle dish with tender caramelized beef, sweet-savory sauce, and chewy udon noodles. Perfect for cozy nights or an easy weeknight dinner.

Ingredients
  

  • 1/2 lb thinly sliced sukiyaki or ribeye beef
  • 1/2 small onion thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp brown sugar
  • 1 tbsp sake or water
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic minced
  • Black pepper to taste
  • 2 portions frozen udon cooked and loosened
  • 3 tbsp butter
  • 3 cloves garlic minced
  • 1 tbsp soy sauce
  • 1/2 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tsp mirin
  • 2 tbsp pasta water or dashi
  • 1 tsp sesame oil
  • Optional: Egg yolk or poached egg
  • Optional: Furikake or toasted sesame seeds
  • Optional: Thinly sliced green onions
  • Optional: Chili oil drizzle

Method
 

  1. In a bowl, combine soy sauce, mirin, brown sugar, sake, sesame oil, grated ginger, minced garlic, and black pepper. Add thinly sliced beef and marinate for 20–30 minutes (can skip marination if you want a fast dinner).
  2. Heat a pan over medium-high heat. Sauté onions until soft, then add marinated beef with its marinade. Cook until browned and caramelized. Set aside.
  3. Cook udon according to package instructions. Drain and separate.
  4. In the same pan, melt butter and sauté garlic. Stir in soy sauce, oyster sauce, sugar, mirin, and dashi or pasta water. Let it simmer briefly, then toss in udon noodles. Mix until glossy and coated. Finish with sesame oil.
  5. Plate the noodles, top with beef and onions, and garnish with optional toppings like egg yolk, furikake, green onions, and chili oil.

Notes

  • For extra flavor, use dashi instead of pasta water.
  • Egg yolk is optional — the dish is delicious with or without it.
