This creamy mushroom udon is a quick and cozy noodle dish made with caramelized onions, sautéed mushrooms, and a rich cream sauce simmered with dashi or chicken broth. The chewy udon noodles soak up every bit of the silky, savory sauce, making it a comforting weeknight meal that comes together in just under 20 minutes.

Ingredients
  

  • 2 servings udon noodles about 18 oz, frozen
  • 3 tbsp unsalted butter
  • 6 cloves garlic minced
  • ½ medium onion thinly sliced
  • 7 oz mushrooms shiitake, enoki, or mixed
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 2 tbsp water
  • 1 cup heavy cream
  • cup dashi or chicken broth
  • Salt and black pepper to taste
  • 1 tsp toasted sesame seeds
  • Optional toppings: sliced green onion furikake, shredded nori, chili oil

Method
 

  1. Boil udon noodles for 1 minute to loosen, rinse with cold water, and drain.
  2. In a pan, melt butter and sauté onion and garlic for 5–7 minutes until golden.
  3. Add mushrooms, soy sauce, mirin, and water. Cook until mushrooms are glossy.
  4. Pour in heavy cream and dashi or chicken broth. Simmer for 2–3 minutes.
  5. Add udon noodles and toss to coat. Simmer until the sauce thickens slightly.
  6. Season with salt and pepper. Plate and garnish with sesame seeds and toppings.
